Unfortunately, I realized rather late in the game that the real goal is not for me to learn how to organize information better, but for my students to learn that skill. As long as I do most of the work, and they only have to memorize what I have already processed, they are missing the most important skill to be gained from higher education, learning how to learn. I use a mixture of lecture, multimedia, and cooperative learning, so I still do some of the organization, but I have succeeded in transferring much more responsibility to the students.
